In the hills of Messenia, where the forest ends and the olive groves begin, thanks to the unique microclimate and soil composition of the area, the worldwide famous variety of Koroneiki olive grows.
Organic cultivation of the olive grove is entirely performed the natural way, without the use of chemical fertilizers, pesticides or other harmful substances for health.
The early selective harvest of the single grove is made by hands.
The specific cultivation and harvesting methods, bequeathed to us by tradition, are being performed with dedication to premium quality.
The transportation of the olives to the oil mill and the cold extraction are completed the same day after harvest, in order to avoid oxidation. By following these steps we protect the olive oil's nutritional integrity.
Ultramodern machinery is being used for milling and bottling procedures.
Thoroughly implemented procedures and quality control ensure the lowest possible acidity which maintains the most of the beneficial health properties and the exciting fruity flavour of our premium olive oils.
Our olive estates scattered along the foothills of mount Aegaleon are well protected by the north winds and thanks to the beneficial Mediterranean climate we choose to dry farm.
Well established olive trees have a much deeper and extensive root system that dig deep into the soil to find water and other nutritious ingredients, contributing this way to the olive oil’s unique character of the area. Specialists call this ‘terroir’ and it’s the thing that fills the mouth with flavors and unforgettable after taste. Trees that are cultivated with dry farming create a thick peel in the fruit which prevents parasites to downgrade the produced oil. This method results in smaller olives filled with nutritious value and ingredients that give shape to the strong personality of these unique extra virgin olive oils. At each step of the way, from organic farming practices to pruning, picking and milling, the olives from our groves receive the best possible care.
It is surely not the easiest way to farm but is the best.
